Sugar acids and derivatives are compounds containing a saccharide unit which bears a carboxylic acid group. Tartaric acid is an extremely weak basic (essentially neutral) compound (based on its pKa). Tartaric acid exists in all living organisms, ranging from bacteria to humans. Tartaric acid is a potentially toxic compound. |
